I've witnessed the decline of classic cocktails in New Orleans in my lifetime, and I'm not quite 60. When tourism became the driving engine of our economy, bars began catering to sugar-jaded tourist palates weaned on Hurricanes, Hand Grenades, and Slush Mango Daiquiris.

Fast-forward several decades, and we've been served so many over-sweetened Sazeracs that no one remembers what this great classic is supposed to taste like.

A new age is dawning. Great bars staffed by great bartenders are popping up all over the place. I have hope!

(In the meantime, ask your bartender not to use more than or one small sugar cube — or ½ to 1 teaspoon of simple syrup.)

Neither of the Sazerac's that I had at the Sazerac Bar, made by two different bartenders, were overly sweet. They had at least 8 bartenders mixing that night, and nobody was measuring anything, so I'm sure there is a lot of inconsistency. That said, the sweeter Sazerac's are how several generations of New Orleanians have preferred the drink, so if you want something different (at the Sazerac Bar or anywhere else in the city) be sure and make the request of your bartender when you order.

In a recent dispatch from the newly-reopened Roosevelt, a blogger gloomily reports that the Sazerac Bar is still over-sweetening its Sazeracs. The drink, according to said blogger, tasted like "...a Jolly Rancher."

FUH GAWD'S SAKE!

Rassle a posse together and kick some Roosevelt ass, wouldja? For the Sazerac Bar to be screwing up its signature cocktail is too embarrassing for words.

Have a fantastic time. Wish I were joining you!

Regarding the Sazerac Bar, based on my experience there on opening night I would suggest sticking exclusively with Sazeracs if/when you go. Most of the staff seemed to have been well trained regarding Sazeracs, and were decent about Ramos Gin Fizzes if you aren't too picky, but the other drinks I saw them make (Old Fashioneds, Manhattans, even martinis) were a horror show. The room is so beautiful that it doesn't really matter, order Sazeracs (in their customized Sazerac Bar rocks glasses) and soak it all in.
