Gabriel:
Who knows where the talks will lead us, but break downs of the classics is sure to be touched upon.

Marleigh:
I've used both powdered and flake. This time around all I could get was flake, which unfortunately takes a lot more heat and time to dissolve, but the results were fine!

Any excuse to eat olives (caviar or not) is okay by me.

Agar is a common ingredient to those of us who don't use gelatin, and I know that powdered and flaked agar create different results. Do you have a preference for which sort to use for MM?

Nice post, Jamie. I've always taken a bit of a skeptical approach towards MM because it appears to add complexity where none is needed (though it does appeal to my nerd instincts as any excuse to play with liquid nitrogen or agar is a good one).

However, by sticking to a simple classic and applying MM techniques to provide a genuinely new perspective and experience with it seems like an admirable application of the technique to my tastes and I may be giving this one a try.

Do you expect to be focusing on these sorts of 'twists' on tradition in your MM presentation or on more exotic tracks?
